My first cookbook review. An absolute must for anyone who loves authentic Italian pasta dishes, not American-Italian pasta. It's exactly as described, delicious pastas, with simple ingredients, none of which takes more than 30mins to prepare. Really enjoyed the tips on the right kind of dried pastas to get-bronze dies, artisanal pasta with a rough texture-more expensive and oh so worth it. Can't go back to cheaply made pasta anymore! Also, who knew that choosing the correct parmesan cheese and knowing how to keep it can be so enlightening??My husband, who is normally highly critical of recipe books, has enjoyed every single dish I've made so far from the book, I've tried about 5, all very successful! What I love most is how few ingredients there are, emphasis on freshness and simplicity, and simple preparations. My only comment is that most recipes are for 4 servings, but when I recreate them as suggested, 3 servings is stretching it, it's usually so good we find it hard not to over-indulge! One word of warning, the recipes are rich, robust and indulgent, just as they are in Italy, so don't be shocked at recipes calling for large amounts of butter and heavy cream, it's worth it, in small careful doses!

I love pasta, but tired of the recipes that I usually rely on. This collection is exactly as advertised -- that is simple, quick recipes that are top form. I have enjoyed this book so much that I have given copies to 5 friends, and a couple of them say they are sending copies to their friends -- a "chain-letter" cookbook as it were. I highly recommend.

This is one of the simplest and tastist cookbooks we own. How can you go wrong with pasta? Make a fast and easy dish with right ingredients and you've got a great meal

I recently got into making pasta and this is perfect for a beginner to pasta making like me. There were so many great ideas and I loved the photos. I also appreciated that it wasn't just directions on how to make the pasta, but also offered the complete dish recipe, ie the sauces. I also liked the soup recipes.

After 40 some odd years of making pasta, I finally found out how to make pasta correctly. This book gives you the secret along with great recipes. My favorite basic recipe is on page 70 and I use this all the time for any and all pasta recipes. The other key is to have great pancetta on hand since it gives a kick up on just plain pasta.Great book and easy to follow. I have given this as a gift for my friends who love a quick and great tasting pasta dinner!!

I really enjoy this cookbook. I ADORE pasta, and cook it at least once a week.This book is full of great ideas to liven up your dishes, and uses lots of fresh ingredients. This book is also very accessible! Hazan frequently uses pantry staples. As pasta itself is not very expensive, Hazan encourages you to (if you can!) splurge on a few quality items like olive oil, parmesan cheese, or proscuitto.There are plenty of vegetarian options here and some extras like soups and pasta recipes tailored to kids.

Contains various mouth-watering recipes. It's amazing to see how many delicious recipes are contained in this book for just pasta. I grew up in Italy and we had pasta every day with a different sauce each time. It was a delicious meal each and every night. Mangia, Mangia! Grazie Giuliano:))

I have made several recipes and they are all keepers! I would recommend this book for anyone who loves pasta! The recipes are very well written and can be made by a novice cook, but taste like a pro made them! The author suggests what you should have in your pantry and refrigerator, how to cook pasta, the different shapes and kinds of pasta. There are pasta soups, vegetarian pasta recipes, seafood, and meat pastas.
